Here’s a quick breakfast option that can be prepped the night before and ready for the morning. Overnight vanilla chia pudding!!
It’s easy to make and I typically make four at a time so I have them ready to go for the week. Have for breakfast, snack and even as a dessert. All you need is a few ingredients and you are good to go.
- 2 tbsp chia seeds
- 1 tsp vanilla vanilla extract
- 1-2 scoop unflavored collagen powder
- 1/2 cup unsweetened vanilla almond milk
Blend all ingredients well, cover with lid and overnight in the refrigerator. In the morning top it off with toppings of choice. I love to add coconut yogurt, berries, coconut flakes, splash of honey and/or coconut sugar.
The topping are endless. Even a scoop of almond butter is a great option to add in some healthy fats. Delish!!
This recipe serves one but feel free to double or triple the recipe and make individually in a mason jar so you have it ready to go.
