Fluffy Buckwheat Waffles is on the menu for today’s breakfast. I recently started using buckwheat flour for pancakes and waffles and what a game changer. Not only is buckwheat gluten free, high in protein & fiber, and full of minerals but is also linked to a bunch of health benefits including improved blood sugar control and promotes heart health.

So now that you know some of the health benefits of buckwheat flour you will also get a very tasty waffle too. Fluffy in the middle and crisp on the outside plus I added a little extra protein… a perfect meal to start your day.

Fluffy Buckwheat Waffles

Description
Here is an easy way to make buckwheat waffles that are super crisp on the outside and fluffy on the inside. Delish!!
Ingredients
1/2 cup buckwheat flour
1/2 tsp baking powder
3 scoops unflavored Vital Proteins marine collagen
2 tsp monk fruit
3/4 cup unsweetened almond milk
pinch of salt
Instructions
- In a small bowl mix all the ingredients until well combined. Let batter rest for five minutes.
- Pour batter onto hot waffle iron and cook. Repeat. Batter makes two big waffles.
- Top off with berries, banana, coconut yogurt & flakes, cinnamon & maple syrup.
Notes
If you don’t have a waffle maker, no problem use batter for pancakes instead.
