Veggie Bowl with Roasted Salmon

This veggie salmon power bowl was a hit the other night for dinner. Packed with all the good stuff plus a homemade dressing with only 3 ingredients!

My goal was to pack as many veggies in the bowl and top with some kind of protein and healthy fats and this was the outcome. Are you a fan of salad power bowls? Recipe Below.

Veggie Salmon Power Bowl

mini bell peppers

brussels sprouts

yellow squash, sliced

zucchini, sliced

salmon

Preheat oven at 400F.

Place all veggies on a baking sheet. Spray or drizzle olive oil to coat, season with salt & pepper. Place salmon on a sheet of foil, drizzle olive oil, dash salt and pepper, splash of coconut aminos, tent foil and place on baking sheet with veggies. Roast for 25 minutes, open the foil then broil for another 5 minutes.

Prep bowl with raw veggies:
mixed greens
cucumbers, sliced
broccoli sprouts
fresh dill
Add to bowl and set to side.

Dressing:
Serve about 4
1/2 avocado
1/2 juice of lemon
unsweetened almond milk or water.
salt & pepper

Blend all together, may need more liquid to get the desired consistency for the dressing.

Add roasted veggies and salmon to bowl with raw veggies. Drizzle the dressing and you’re good to go. I had a little leftover tzaziki sauce and topped on the salmon. Delish!!
