Here’s a little inspiration for when you need to use up the remaining veggies in the fridge and leftover chicken. Make a big power salad bowl for lunch! This bowl consisted of all my leftovers before my big grocery shopping haul including the crispy chickpea croutons.
Ultimate Power Salad Bowl
- mixed greens
- shredded chicken
- roasted chickpea croutons
- roasted broccoli
- roasted bell peppers
- roasted tomatoes
- avocado
Add all ingredients to a salad bow. Drizzle a mixture of fresh lemon juice, tahini, garlic salt, pepper and splash water for the dressing. This nutrient dense meal is packed with all the healthy fats, protein and carbs/fiber!!
Will keep you full for hours. Delish!!!
