Meet one of my all time favorites Quinoa Raspberry Salad with goat cheese, pumpkin seeds, almonds and a simple lemon juice dressing. This salad is perfect for lunch or even a side dish that will compliment any meal.
This quinoa raspberry salad is jammed packed with healthy fats from the goat cheese, almonds and pumpkin seeds. You are also getting plenty of carbohydrates and fiber from the quinoa, raspberries and greens plus ample amount of protein from the quinoa, goat cheese and nuts & seeds.
I added fresh lemon juice as the dressing to keep it on the lighter side. You can also add in a splash of extra virgin olive oil with the fresh lemon if you prefer a heavier dressing. I would suggest making your own dressing as most store bought dressings are full of sugar, preservatives, emulsifiers and highly processed inflammatory oils. These processed oils are stripped of its nutrients and processed at high temps creating inflammation in the body.

Ingredients
- 2 handful of greens (mix of arugula & baby spinach)
- 1 cup cooked quinoa
- 1 oz. goat cheese
- 1/4 cup raspberries
- 2 tsp slivered almonds
- 2 tsp pumpkin seeds
- 1/2 lemon, juice
- salt and pepper for tasting
Instructions
- In a large bowl, add the greens, cooked quinoa, raspberries, goat cheese, almonds and pumpkin seeds.
- Toss until salad is combined.
- Season with salt and black pepper, to taste.
- Squeeze lemon juice on. Enjoy!
