Serves 4
Ground Beef
2 tablespoon olive oil
1 lb. grass-fed ground beef
1 1/2 teaspoon chili powder
2 teaspoon cumin
1 1/2 teaspoon garlic powder
1 1/2 teaspoon onion powder
sea salt and black pepper
Cauliflower Rice & Black Bean
4 cup frozen cauliflower rice
1 tablespoon olive oil
4 tablespoon lime juice
2 teaspoon of lime zest
4 tablespoon cilantro, chopped
1 can black beans
2 green onions, chopped
2 tablespoon olive oil
6 cups kale, chopped,
2 avocado, cubed
2 limes
Place frying pan with 2 tbsp olive oil on medium heat. Brown ground beef until almost cooked. Stir in chili powder, cumin, garlic powder, onion powder, salt and pepper. Cook for another five minutes or until done.
While the ground beef is cooking, in a separate pan heat 2 tbsp olive oil. Add cauliflower rice and saute on low to medium heat. Add in black beans, lime juice, zest, green onions and cilantro. Cook for five minutes. Set to the side. Make sure not to overcook or the rice will get soggy.
Next in a large bowl add kale, olive oil and a dash of salt and pepper. Massage kale until it starts to soften, about 2-3 minutes.
Assemble each serving bowl with kale at the bottom of the bowl. Add the ground beef, cauliflower rice and black beans mixture. Top off with avocado and a squeeze of lime juice.
