Fluffy Egg White Oats

If you haven’t tried then you’re missing out.
How many times have you had a bowl of oats with fruit & nuts for breakfast only to find yourself hungry shortly after?

There’s a missing link and that would be protein. Oats contain a small amount of protein but not enough to keep you satisfied in my opinion. You can add protein powder but I found that adding 3-4 egg whites does the trick and keeps me full for hours plus it makes your oats super fluffy and creamy.

Fluffy Egg White Oats
Ingredients
1/2 cup bob’s red mill rolled oats
1 cup water
3 egg whites
1/2 cup berries
1/4 tsp cinnamon
1/2 tsp monkfruit (honey or maple syrup)

Bring water to a boil on medium heat, add oats, stir and cook until water is absorbed. Then stir in egg whites and turn heat to med/low heat. Continue to stir until the eggs are cooked and mixture is fluffy, about 5 minutes.

Mix in berries, cinnamon and sweetener. Remove from heat and transfer to bowl.

Add toppings of choice. Here I added a few more fresh berries, ground flax seed, cacao nibs, splash almond milk & dollop of cashew butter.
