This lentil tuna salad was one of the salads in my clean eats challenge guide that I recently held with clients and friends. The clean eats challenge was all about crowding out the bad and focusing on eating whole foods.
My clients are learning that when you shift your mindset on what you can have, you start to automatically crowd out the bad. Let’s continue to crowd out the unhealthy and create healthier eating habits. And you can start with this salad. Recipe below.
Lentil Tuna Salad, Serves 2
1 can tuna, drained
1 15oz. can lentils, cooked
1/2 cup cucumber, chopped
1/2 red bell pepper, chopped
2-3 cup spinach, chopped
1 lemon, juiced
Dried herbs of choice
1 green onion
salt and pepper
Directions
- Drain tuna and flake with a fork. Season with salt and pepper and a splash of olive oil.
- In a large bowl, combine cooked lentils, flaked tuna, spinach, red bell peppers cucumber and dried herbs. Toss with lemon juice, salt and pepper. Top off with green onions and almonds (optional).
- Drizzle with your dressing of choice.
